SCD Strawberry and Banana Parfait

Start off your day with this perfect Parfait! We made this strawberry banana yogurt from scratch, blending fresh strawberries, bananas with homemade yogurt that was made using a yogourmet machine. The parfait is topped off with Wellbees crunchy and delicious all-natural granola! Have this for breakfast, and feel great all day!

Put yogurt, banana, strawberries, and honey into a blender and mix well. Top off the mixture with granola. Enjoy!

SCD Mini Banana-Walnut Muffins

Check out these cute mini Banana Walnut Muffins! We adapted this from our original banana bread recipe, and added crushed walnuts into these! They make a great healthy dessert, breakfast treat, or on the go snack!

Ingredients:

  • 3 cups of almond flour
  • 3 whisked eggs
  • 2 very ripe bananas 
  • 1 tablespoon of baking soda
  • 1/2 tablespoon salt
  • 1 tablespoon vanilla extract
  • 1/8 cup honey
  • 1/4 cup coconut oil

Instructions:

Mix the wet ingredients together (eggs, vanilla, honey, coconut oil, mashed bananas). After wet ingredients are mixed together, combine them with the dry ingredients (almond flour, baking soda, salt. Put the mixture into little paper cups on a tray, top it with banana slices and almond slivers (or it can be topped with whatever nuts or fruit you choose!). Bake the banana bread bites at 350 degrees for about 45 minutes  They should be ready when a toothpick is inserted into the middle and comes out clean. Enjoy!!

SCD Pumpkin Pie

Here is our seasonal pumpkin pie! Made with simple and honest ingredients, our all natural almond flour crust is filled with a delicious pumpkin pureé! A seasonal dessert, made with only natural ingredients sure to brighten up any table! Here is the recipe!!

Ingredients: 

Crust:

  • 2 cups of almond flour
  • 1 egg
  • 1 tablespoon of honey
  • 1 teaspoon salt

Filling:

  • 1 15 oz can pumpkin puree
  • 1/4 cup freshly squeezed orange juice
  • 3 eggs
  • 1/4 cup honey
  • 1 tbs vanilla extract
  • 1/2 teaspoon salt

Make the crust by placing all ingredients in food processor and pulsating until dough comes together. Roll the dough in to a ball. Place between two pieces of parchment paper and roll carefully into a circle approximately the size of the pan. Use the outer part of the tart pan to cut the dough into the correct size. Line the tart pan with parchment paper and carefully flip the dough into the tart pan. Bake for 15 minutes until crust is slightly brown. Allow the crust to cool. Combine all filling ingredients thoroughly. Pour into the tart pan and cook for approximately 30 minutes. Enjoy!!

Turmeric Ginger Lemonade

Turmeric Ginger Lemonade

This drink is an anti-inflammatory digestive aid, and a refreshing treat! Turmeric root can be hard to find. Whole foods carries it sometimes, otherwise, order it from amazon!

Ingredients:

  • Turmeric Root
  • Ginger Root
  • Honey
  • 1 quart of Boiling water
  • 1 Lemon 

Directions:

Slice and peel approximately two inches of turmeric and ginger root. Put in a 1 quart glass pitcher, pour boiling water over the roots, squeeze a full lemon into the drink, and add honey to taste. Can be enjoyed as a hot or cold drink. Enjoy!

Homemade Almond Milk

Homemade Almond Milk

This almond milk is great in cappuccinos, with some homemade SCD granola and berries!

Ingredients:
1 cup Blanched Almonds
2 cups Water
Optional: Honey, Vanilla, Cinnamon, etc.
Materials:
Blender (the more powerful, the better!)
Nut milk bag (I like the Zimtal nut milk bag- the mesh is very fine!- you can buy it on amazon- we use two to ensure that there are no almond bits left in the milk)
Add the almond milk, water, and other desired ingredients into a blender, and then blend the mixture for a few minutes, depending on the strength of your blender. Pour the milk into the nut milk bag and strain it over a bowl.
