Tuna “Paleo Wrap”
This tuna wrap was made with “Paleo Wraps,” which are made entirely from coconut meat, and can be found on http://paleowrap.com or amazon.com! They make life so much easier as they are a good “on-the-go” meal, which is sometimes hard to find with the SCD diet!! There are so many different ways to eat these wraps, and they are also very tasty!!
SCD Coconut Macaroons
1 1/2 cups blanched almond flour
1/2 teaspoon sea salt
2 cups unsweetened shredded coconut
3 egg whites
1/2 cup of honey
Whip the egg whites until stiff, then fold in the other ingredients. Drop spoonfuls of batter on a tray lined with parchment paper. Place in an oven at 350 degrees for about 15 minutes. Enjoy!
